Apple & Banana Breakfast Muffins

A friend sent me this recipie and they turned out good...This was my first ever attempt at this recipie using no egg binding replacement....only apple juice and mashed bananas...all things considered, it was a good result. Heres the original recipie, i added some extra grated nutmeg, because nutmeg rules and also used some soft brown sugar with the white sugar...


Shopping Basket:

2 (american) cups of flour
4 tsp baking powder
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 cup of sugar
1/2 cup of apple juice
1 apple diced into small cubes
2 ripe bananas....MASHED!

Instructions....

1. Preheat your oven to about 160 degrees C

2. In a bowl mix together the flour, baking powder, spices and sugar. Tip in your apples and finally add the apple juice and bananas. Mix together with a trusty utensil.

3. Pour the "batter" into muffin cases until about 2/3 full.

4. Bake in oven for about 40-45 minutes.

These are soooo healthy....youve got at least a portion of your daily fruit intake, plus great for fibre. No butter, eggs or oils in sight. They definetly taste "vegan" but not in a bad way.
