Bakin' Bread.

Vegan Sultana Loaf.


A lovely lady at my old place of work made a batch of this for a charity bake sale we had and it was amazing! Obviously being vegan it has no eggs, but it also has no sugar! Yet still really scrummy, and super easy to make....

You will need:

250g sultanas
a cup of water
80g of soya margarine
pinch of salt
one tsp of bicarbonate of soda
two tsp of cinnamon
I also added an extra tsp of ground nutmeg as its my fav.

Method:

Preheat your oven to 180 degrees c and line or grease a loaf tin.
Soften the sultanas in a pan with your cup of water until the water simmers for around 3 minutes. Rub the margarine with the flour and then stiry in the spices and bicarbonate of soda. Next stir in the sultana/water mix until evenly distributed. Spoon the whole lot into the loaf tin and cook for one hour.

Wait for it to cool and cut into slices.

This is seriously good.
